Ingredients:
- 1 cup basmati rice, washed and drained
- 4 cups whole milk
- 1 cup water
- 1 cup granulated sugar
- 2 tbsp unsalted butter
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground cardamom
- 1/4 tsp salt
- 1/4 cup raisins (optional)
- 1 tsp vanilla extract
- 1/4 cup chopped almonds or pistachios (optional)
Instructions:

Cook the Rice:
In a large pot, combine the rice, water, and 2 cups of milk. Bring to a boil, then reduce heat to low. Cover and simmer for about 15-20 minutes, until the rice is fully cooked and the liquid is absorbed.

Add Milk and Sugar:
Once the rice is cooked, stir in the remaining 2 cups of milk, sugar, and butter. Cook on medium heat, stirring frequently, until the mixture thickens and the rice absorbs most of the milk (about 10-15 minutes).

Spice it Up:
Add the ground cinnamon, nutmeg, cardamom, and salt. Stir well to combine the spices with the rice mixture.

Add Flavour and Texture:
If using raisins, stir them in now, along with the vanilla extract. Continue cooking for another 5 minutes, allowing the flavours to meld together.

Remove from heat and let cool slightly. Garnish with chopped almonds or pistachios, if desired. Serve warm or at room temperature.
