Ingredients
- 1 cup grated pumpkin
- 1 cup grated coconut
- 1 cup cornmeal
- ¼ cup sugar (adjust to taste)
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp vanilla extract
- ¼ cup raisins
- ¼ cup melted butter
- Pinch of salt
- Banana leaves (for wrapping)
Instructions
- In a large mixing bowl, combine the grated pumpkin, grated coconut, and cornmeal.
- Add the sugar, cinnamon, nutmeg, vanilla extract, raisins, melted butter, and a pinch of salt. Mix well until all the ingredients are combined.
- Cut banana leaves into squares (about 8 inches) and pass them over an open flame to soften.
- Place a spoonful of the mixture in the centre of each banana leaf square and fold the leaf to seal.
- Steam the wrapped conkies in a pot for about 40–45 minutes, or until firm.
- Once cooked, remove from the steamer and let them cool slightly before unwrapping and enjoying.
