Prep Time: 15 minutes Cook Time: 1 hour Serving Size: 8 Difficulty: Easy
Ingredients:
- 6 cups stale bread, cubed
- 2 ripe bananas, mashed
- 1 cup granulated sugar
- 4 large eggs, beaten
- 2 cups whole milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground allspice
- 1/4 cup melted butter
- 1/2 cup raisins (optional)
Instructions:
Reheat the oven: Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish and set aside.
Prepare the bread: Place the cubed bread in a large mixing bowl. If the bread is not stale, you can toast the cubes in the oven for about 10 minutes to dry them out slightly.
Combine wet ingredients: In a separate bowl, whisk together the mashed bananas, sugar, beaten eggs, milk, vanilla extract, ground cinnamon, ground nutmeg, and ground allspice until well combined.
Assemble the pudding: Pour the wet mixture over the bread cubes, making sure all the bread is soaked. Let it sit for about 10 minutes to ensure the bread absorbs the liquid. If using, fold in the raisins at this stage.
Add butter: Drizzle the melted butter evenly over the mixture.
Bake: Transfer the bread mixture to the prepared baking dish. Bake in the preheated oven for 45-60 minutes, or until the pudding is set and the top is golden brown.
Serve: Allow the bread pudding to cool slightly before serving. Enjoy it warm, either plain or with a dollop of whipped cream or a scoop of vanilla ice cream.
